Apple Coffee Cake
2 cups unsifted flour
1 1/2 cups sugar
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
1/2 cup oil
2 eggs, beaten
1/4 cup brewed coffee
1 1/2 tsp. vanilla
2 1/2 cups sliced and peeled apples
1 cup chopped nuts (optional)
