Our Favorite Oatmeal

oatmeal.jpg Baked oatmeal is my kids’ absolute favorite breakfast. No coffee cake or muffins or egg dish tops this one in their book. And that’s alright by me since it’s healthy and very simple to prepare!

Baked Oatmeal

In a large bowl, beat 4 eggs. Add 3/4c oil and 3/4c honey. Then stir in:

    6c oats
    1/3Tbsp baking powder
    1tsp salt
    2c milk

At this point, you can add a whole host of yummy ingredients, like cinnamon, raisins, nuts, chopped apples, dried cranberries, sunflower seeds, etc. This is also a great way to throw in those good-for-you things like flax seed and wheat bran without your kids ever knowing!

Mix everything well and pour into a 9″x13″ pan.
Bake at 350* for 30 minutes and then allow it to sit for 15 minutes.
I serve it with additional milk and a little real maple syrup for a bit of extra sweetening.

Serves 8-12 people (depending on ages and hunger of your crew!)

If you want, you can prepare it the night before and then bake it in the morning. You may have to give it a little additional baking time if you do this.

  1. Love this recipe. Love it. I got it from a Mennonite family who hosted us through Mennonite Your Way, a hospitality ministry that makes traveling for families cheap (and fun, in my book.) She had made it the night before and popped it in the oven first thing the next morning - yummy!

    My favorite is with cinnamon, chopped apples, dried cranberries, and walnuts!

  2. Thanks for this recipe. I have heard about baked oatmeal but have yet to search out a recipe and try it. My hubby loves oatmeal and this would be perfect for Sunday mornings.
