Total prep time: about 30 minutes, start to finish
Servings: feeds my family (5 who are eating table food)
Bring 4c of water to a boil in a pot (add a tablespoon or two of olive oil for good measure!).
Stir in 1.5c of millet, cover, and reduce heat; simmer for 25-30 minutes until water is absorbed and millet is soft and fluffy.
Let stand for 5 minutes before serving.
In 3T of butter, saute:

Mix well and heat, stirring frequently, until thickened and starting to bubble.
Serve over millet for a wonderfully inexpensive and tasty meal!

I’ve purchased mine at a local food co-op and also at a natural foods/vitamin store. I plan on purchasing it in the future by ordering, as I anticipate that will be cheaper.
Do you have a Whole Foods? Trader Joe’s? I would be surprised if a place like that didn’t sell it.
