Tuna Curry on Millet

Total prep time: about 30 minutes, start to finish

Servings: feeds my family (5 who are eating table food)

for millet

Bring 4c of water to a boil in a pot (add a tablespoon or two of olive oil for good measure!).

Stir in 1.5c of millet, cover, and reduce heat; simmer for 25-30 minutes until water is absorbed and millet is soft and fluffy.

Let stand for 5 minutes before serving.

for tuna curry

In 3T of butter, saute:

  1. 2-4 cloves of minced garlic
  2. 1 small diced onion
  3. 1 small chopped green bell pepper

Stir in:

  1. 2 6oz cans of tuna (I like albacore tuna the best, but use your favorite)
  2. 2c sour cream
  3. 3tsp curry powder (I use more because we like our curry around here!)
  4. salt & pepper

Mix well and heat, stirring frequently, until thickened and starting to bubble.

Serve over millet for a wonderfully inexpensive and tasty meal!

    I’ve purchased mine at a local food co-op and also at a natural foods/vitamin store. I plan on purchasing it in the future by ordering, as I anticipate that will be cheaper.

    Do you have a Whole Foods? Trader Joe’s? I would be surprised if a place like that didn’t sell it.

    Hope you can find it because it’s definitely a great try!
